Quickie Dinner

Another weeknight and what to make for dinner… I was having Megan over again for more home improvements (my list was LONG!) so I decided on a Quiche and Salad for dinner. This quiche was made with ham and cheese that I picked up at the Reading Terminal Market.  Megan brought the pie shell and we went to work putting it all together and pouring the eggy mixture over the spinach, ham and cheese. I added thyme and popped it in the oven. While it was baking, I made a simple green salad with craisins and toasted walnuts to eat along side the quiche.  We cracked open a bottle of white wine and enjoyed this simple, delicious treat. The egg wasn’t runny at all (a huge pet peeve of mine) and the saltiness of the ham complimented the creamy cheese. (I chose a Gruyere).

I have another crust in the freezer just waiting to be filled. Quiche is definitely back on the menu.
