Homage to National Poetry Month: Plum Cake

This Is Just To Say

I browsed a few of my favorite poetry books and came across William Carlos Williams.

Of course!

The Plum Cake recipe is one I had scribbled on a piece of napkin and tucked into my recipe box. I knew I had it, but had never tried it. When pieces of the puzzle fall together that easily, it’s hard to go against it. The cake is moist and dense. The cinnamon and cloves are perfect. My fresh plums, however, were mealy and tasteless, which was a huge disappointment.

I’d definitely make this cake again, especially if it was short notice since it’s pretty much dump everything into a bowl, mix, bake, eat. Must remember to stock pantry with plum baby food! (See the recipe below, if you think I made that up!)

Plum Cake

2 C Self Rising Flour
2 C Sugar
1 C oil
3 eggs
2 small jars plum baby food
1 t cinnamon
1/2 t cloves
1 C chopped nuts (optional)

Mix all ingredients in a large bowl. Add nuts last. Bake 1 hour at 350 in a greased bundt pan. Garnish with powdered sugar and fresh plums.
